Our performance is led by CREATE Catering’s Owner and Managing Director Anthony Whitehouse. Our Conductor, as we call him, is a catering industry veteran of the global stage.
Anthony has managed and run some the world’s top eateries, functions and retail businesses from London’s Blues Bistro and Bar to Sydney’s Taronga Zoo and the Australian War Memorial in Canberra. Having seen the best of the best, Anthony has drawn on that experience to form CREATE Catering – one of Sydney’s leading event caterers.

Stefano Mondonico
EXECUTIVE CHEF
With 17 years of experience in the culinary world, Stefano has made his mark as a talented chef. As the Executive Chef at Create Catering, he blends his Italian heritage with his Brazilian roots to deliver unforgettable dining experiences.
Stefano's journey began at just 15, when he worked in his family's restaurant in Rio de Janeiro. After finishing school, he moved to Milan, Italy, where he received formal training in gastronomy. His career quickly took off in Milan at Noy Concept, and soon after, he worked alongside top chefs Sergio and Javier Torres at Eñe in Rio.
His culinary path then led him to Sydney, where he took on key roles, including head chef at North Bondi Fish under the guidance of Matt Moran, executive chef at Seta Sydney, and head chef at Gowings at QT Hotel. In 2023, his talent was recognised when he earned his first Chef’s Hat from Good Food for his work at Gowings.
Stefano’s cooking philosophy is all about letting great produce shine. He believes "less is more" when it comes to highlighting the natural flavours of top-quality ingredients. He’s committed to showcasing the purest form of each element on the plate.
Growing up near the ocean, Stefano developed a deep connection to seafood. He learned to spearfish and cook his catch with his dad. These early experiences sparked his passion for seafood—whether crudo, cured, aged, or charred. His Brazilian-Italian roots also drive his love for churrasco, which always brings back memories of home.
